Kale is for Lovers

According to my list of resolutions for 2012, I'm trying to move toward a whole food, plant-based diet. This resolution was inspired by the documentary, Forks Over Knives - which I highly recommend that everyone watch as soon as possible.

While I am an avid supporter of the movement, I have hit some road blocks; mainly, grad school. [My diet currently consists of coffee, Combos, and Hot Tamales.] For what it's worth, however, we are juicing at least once a day - and I am writing that off as a good first step.

Every evening, Jeff and I share a pitcher of juiced kale, carrots, apples, ginger, spinach, lemons, pears, and oranges. It's a bonding experience [to say the least] as we narrowly finish each glass. To make the experience a little less painful, we always top our juice off with a straw.

Don't laugh, the straw helps.

We began juicing about six months ago and have wavered in our commitment to the cause. We'll go three weeks, juice every day, and then we'll have one bad batch of kale and call it quits. To be fair, you will never taste anything so awful as rotten kale.

To keep this train on the right track, a supportive friend of ours gave us a new set of straws.

Yes, I agree, this is an extremely thoughtful and kind friend. And let me be clear, she didn't just give us any ol' set of straws; they are eco-friendly, biodegradable, paper straws, made with food safe ink. [Resisting the urge to squeal.]

I am not sure if it is my obsession with paper products, or my preference to sip instead of gulp; but I am pretty pleased right now.

Happy Wednesday,
